My husband and daughter went on a college tour trip this week. It is my daughter’s spring break, so it was the perfect time.
I wanted to make them something to take along. I don’t know about you - but I love to snack while on long drives. Maybe it helps me focus, maybe it is just a cure for boredom. . .
So I made these cookies for them to take along.
The recipe is pretty easy to put together. It does create a very soft dough, so refrigerator is definitely needed!
Using the granulated and brow sugar gives the cookies a nice sweetness. The brown sugar also adds a lovely bit of color.
These are a very simple cookie. Not a whole lot going on really.
The have a lovely vanilla flavor. They are a bit crisp, but not crunchy.
The recipe made about four dozen cookies, which is a nice amount. I sent some with the husband and daughter and gave the rest to a friend. I definitely did not want them in the house all week!
VANILLA REFRIGERATOR COOKIES
1 Cup Shortening
1/2 Cup Granulated Sugar
1/2 Cup Packed Brown Sugar
2 Eggs
1 1/2 Teaspoons Vanilla
2 3/4 Cups All Purpose Flour
1/2 Teaspoon Baking Soda
1 Teaspoon Salt
Mix shortening, sugars, eggs, and vanilla thoroughly. Sift dry ingredients into shortening mixture. Mix thoroughly with hands and press into a long, smooth roll 2 1/2 inches in diameter. Wrap in wax paper, chill several hours or overnight. Heat oven to 400 degrees. Cut roll into thin slices about 1/8 inch thick. Place a little apart on baking sheets. Bake 6 to 8 minutes.
