I wasn’t sure what to expect with this cookie. The recipe title doesn’t exactly give anything away.
Basically it is a sugar cookie. But with brown sugar.
The brown sugar gives the cookies a lovely rich color.
As does the honey. The honey also gives the cookies a nice and rich flavor.
The lemon flavoring gives the cookies just a hint of citrus.
The dough shapes well, so it also rolls nicely.
I used a holly leaf cutter and sprinkled the tops with a little colored sugar.
The shape didn’t hold all that well, maybe it was the shape I choose.
But the cookies taste great, so I was able to overlook my undesirable shape choice.
MERRY CHRISTMAS COOKIES
1/3 Cup Shortening
1/3 Cup Sugar
1 Egg
2/3 Cup Honey
1 Teaspoon Lemon Flavoring
2 3/4 Cups All Purpose Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
Mix shortening, sugar, honey, egg and flavoring thoroughly. Sift together flour, baking soda, and salt. Blend in. Chill. Heat oven to 375 degrees. Roll dough out to 1/4 inch thickness. Cut into desired shapes. Place 1 inch apart on greased baking sheets. Bake 8 to 10 minutes.
