Delicious Turnips

Turnips have a lovely earthy flavor. For some reason I don’t make them very often.



You really do need to boil them for at least 20 minutes for them to become soft. The are like potatoes in that way.



The butter have a lovely herb feel from the parsley. There really is no need to add salt.




The lemon gives the vegetable a nice bit of tartness.



I opted to use the paprika, so my end result had a reddish color to it.



Overall a very nice side dish, with very little effort!



TURNIPS IN PARSLEY LEMON BUTTER

6 Medium White Turnips, Pared and Cubed

2 Tablespoons Butter

1 Tablespoon Lemon Juice

2 Tablespoons Parsley

Pepper or Paprika


Cook turnips in salted boiling water, covered, for 20 to 30 minutes. Drain. Melt butter, add lemon juice and parsley. Heat and pour over turnips. Add a dash of pepper or paprika.
