Delicious Sweet Potatoes

I grew up hating sweet potatoes. At some point in the past twenty years or so, that changed. I find now that I quite enjoy sweet potatoes.



Layering them with the apples enhances the sweetness factor. Using the tart apples helps with that as you get a little tartness as well.




Coating the slices before placing them in the casserole provides the dish with a sauce of sorts.




The bacon over top is a lovely addition. You get the bacon flavor through out the dish.




This was a lovely side dish!





SWEET POTATO APPLE CASSEROLE

1 Pound Sweet Potatoes

2 Large Tart Apples

2 Tablespoons Flour

2 Tablespoons Brown Sugar

1/4 Teaspoon Salt

2 Tablespoons Butter

1/2 Cup Cider

4 Strips Bacon


Scrub potatoes, peel thinly and cut into one fourth Ince slices. Core and slice apples thinly but do not peel. Mix flour, sugar, and salt and lightly dredge the potatoes and apples with the mixture. Arrange apples and potatoes in alternate layers in a buttered casserole. Dot with butter, pour on the cider, and arrange bacon strips over the top. Cover and bake in a 350 degree oven for 35 minutes. Uncover and bake an additional 10 minutes.
