Delicious Soup!

It was a little chilly last night. What could be better on a chilly night than a hearty bowl of soup?



This soup did not disappoint. The vegetables are the perfect softness at the end of cooking. The hamburger crumbles nicely. You get a lovely bite of vegetable and meat in every bite.




The rice was something new. Usually, the minestrone I have had include small noodles. I thought the rice was nice.



The soup is more like a stew. It ends very thick. I don’t think that is a bad thing though. You could easily add more water if you would prefer a thinner soup.



It is very hearty and goes great with some fresh bread.



ITALIAN HAMBURGER MINESTRONE SOUP

2 Tablespoons Oil

1 Cup Chopped Onions

1 Pounds Hamburger

1 Can Diced Tomatoes

1 Cup Chopped Cabbage

1 Cup Cubed Potatoes

1 Cup Sliced Carrots

¾ Cup Sliced Celery

¼ Cup Chopped Bell Pepper

1 ½ Quarts Water

¼ Cup Uncooked Rice

2 Bay Leaves

½ Teaspoon Thyme

¼ Teaspoon Oregano

¼ Teaspoon Basil

4 Teaspoons Salt

¼ Teaspoon Pepper


Sauté onion and hamburger in oil until meat is brown. Add vegetables. Brig to a boil and then add remaining ingredients. Cover and simmer for 1 hour.
