Delicious Lemon Bars

This recipe starts off like a traditional lemon bar.



The base is a shortbread like start. Of course, it is a little different in that you use brown sugar instead of white. This give the crust a bit of color as well as the molasses like flavor.





The topping does have a lovely lemon flavor. It is nice and strong and tart.




Again, like a traditional lemon bar, but different with the brown sugar.




The coconut adds a little crunch as do the walnuts.




The raisins add little pops of sweetness which contrasts nicely with the tart lemon.




These were absolutely delicious. You should definitely try them!



COCONUT LEMON BARS

2 Cups All Purpose Flour

1/2 Cup Butter

1/4 Cup Packed Brown Sugar

3 Eggs, Beaten

2 Cups Packed Brown Sugar

1/2 Teaspoon Salt

1 Cup Shredded Coconut

1/2 Cup Raisins

1/2 Cup Chopped Walnuts

2 Tablespoons Lemon Juice

1 Teaspoon Grated Lemon Rind


Heat oven to 350 degrees. Mix flour, butter, 1/4 cup brown sugar thoroughly. Press firmly into the bottom of a greased 13x9 pan. Bake 10 minutes. Mix eggs, 2 cups sugar, and salt thoroughly. Stir in the remaining ingredients. Spread evenly over the partially baked bottom layer. Bake 25 minutes. Cut into 3 x 1 inch bars when cool.
