Delicious French Fries

Making French fries at home is not something I do all that often. I find the clean up to be a pain.



I am glad I made them for this recipe. They were absolutely delicious!



I did leave the peels on the potatoes. Obviously this is a personal preference, you can remove them if you want.


Soaking the potatoes in water helps remove a lot of the starchiness of the potatoes.



You do have to make sure you dry the potatoes very well. If there is any moisture on them, it will cause an oil explosion of sorts. Water and oil don’t mix well.



I did cook the potatoes in 300 degree oil for about five minutes. They did not turn golden brown, but they were cooked through well.



I was concerned that they would be took crispy if I cooked them any longer. I like my fries crispy on the outside and soft on the inside. That is exactly what I got.



FRENCH FRIED POTATOES

6 Medium Potatoes

Deep Fat For Frying

Salt


Wash potatoes, pare and cut into long strips 1/4 to `1/2 inch thick. Soak in cold water for 1 hour. Drain, wipe very dry between towels. Place just enough potato in frying basket to cover bottom. Immerse in fat and cook until lightly browned, 3 to 5 minutes. Keep shaking potatoes while cooking. Drain and place on absorbent paper. Sprinkle with salt while hot.
