Delicious Coffee Cake

I would love to bring bake the times of sitting around and chatting over coffee and coffee cake. I don’t know why we stopped doing this.



The Mid Century ladies definitely had an advantage over us on that. They knew the benefits of a good coffee cake and good conversation while eating it!



This was a lovely recipe. The cake itself is soft and moist.




The streusel was amazingly delicious. The brown sugar and cinnamon combine well with the pecans that I used. You get the flavor of a candied nut without the hard shell.



Layering the streusel is also great. This ensures you get enough of the cinnamon goodness in every bite!



Make a coffee cake – take some time to sit with friends and enjoy it!



STREUSEL FILLED COFFEE CAKE

¾ Cup Sugar

¼ Cup Shortening

1 Egg

½ Cup Milk

1 ½ Cups Sifted Flour

2 Teaspoons Baking Powder

½ Teaspoon Salt

½ Cup Brown Sugar

2 Tablespoons Flour

2 Teaspoons Cinnamon

2 Tablespoons Melted Butter

½ Cup Chopped Nuts


Cream together sugar and shortening. Add egg, mixing until well blended. Stir in milk. Sift flour, baking powder and salt into wet ingredients. Stir until just combined. Pour half the batter into a greased and floured 9” square pan. Combine brown sugar, 2 tablespoons flour, cinnamon, melted butter and nuts. Sprinkle half the mixture over batter in pan. Pour remaining batter into pan and top with remaining streusel mixture. Bake in a 375 degree oven for 25 to 35 minutes. Serve warm.
