Delicious Breakfast Bread

This is a great recipe, truly a great way to use zucchini!



Grating the zucchini gives the bread an overall zucchini flavor. You get the flavor, but no actual chunks of zucchini.




The lemon zest is the amazing ingredient! You get just a hint of lemon with every bite. It is wonderful!



The recipe makes two loaves, so my husband took a loaf to work. He said it was gone within an hour.



With butter or without this is a great breakfast bread!



ZUCCHINI BREAD

3 Cups Flour

1 ½ Cups Sugar

1 Cup Walnuts, Chopped

4 ½ Teaspoons Baking Powder

1 Teaspoon Salt

4 Eggs

2/3 Cup Salad Oil

2 Cups Zucchini, Grated

2 Teaspoons Grated Lemon Peel


Mix flour, sugar, walnuts, baking powder and salt in a large bowl. In a medium bowl, beat eggs slightly, add oil, zucchini and lemon peel. Stir liquid mixture into flour mixture until just moistened. Divide into two loaf pans. Bake 1 hour at 350 degrees. Cool 10 minutes before removing from pans.
