I have mentioned before that I quite enjoy a breakfast bread. I think it is a great way to get something quick for breakfast. So I am always on the look out for a good breakfast bread recipe.
This bread was absolutely delicious!
The batter is very thick. You don’t really pour it into the loaf pan, more like spreading it.
For the apples I used two Granny Smith. I find that Granny Smith apples are the best for baking. They are tart and just a bit sweet. This gives the baked good a bit more depth in flavor, in my opinion.
For the nuts I used pecans. I love the saltiness a pecan gives.
The bread bakes beautifully. It stays moist for the moist part too. On day five, the bread did start to become a little crumbly. Of course, that was on day five. Honestly I am surprised it lasted that long.
Spreading the bread with a little butter made it even better!
APPLE NUT BREAD
1/2 Cup Butter
1 Cup Sugar
2 Eggs
1 Teaspoon Vanilla
1 1/2 Tablespoons Sour Cream
2 Cups Sifted Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Chopped Nuts
1 Cup Chopped Apples
Cut butter into sugar. Add eggs, one at a time, mixing well after each addition. Blend in vanilla and sour cream. Sift together dry ingredients. Add nuts. Combine with first mixture. Stir in apples. Pour into a greased loaf pan. Bake in a 325 degree oven for 1 hour.
