My husband turned to me on Saturday morning and said “I want something hot for breakfast.” Of course he did! So I looked around to see what I had. In the end, waffles was the plan.



I don’t use my waffle maker all that often. I’m not sure why, we all enjoy waffles.



The batter is just sweet enough. And is very smooth.



I had some blueberries on hand and decided to add them. I folded the blueberries in just before adding the batter to the waffle iron.



I do think that whipping the egg whites before adding them gives the waffles a very light and fluffy feel.



This was a vastly successful recipe. I kind of wish we had doubled it so there would have been more of them.



WAFFLES

1 Cup Sifted Flour

2 Teaspoons Baking Powder

1/4 Teaspoon Salt

1 1/2 Teaspoons Sugar

1 Egg, Separated

1 Cup Milk

3 Tablespoons Melted Shortening


Sift dry ingredients together. Beat egg yolk; add milk and shortening. Combine with dry ingredients; beat until smooth. Stiffly beat egg white, then fold in. Pour about 1/4 cup of the batter on a preheated waffle iron, bake 2 minutes or until browned.
