Deceptive Cookie

When I think of a crisscross cookie, my mind immediately goes to peanut butter cookies.

The traditional peanut butter cookies has the criss cross pattern in the top. Sometimes sprinkled with sugar, sometimes not.

So this cookie is a bit deceptive. It is not a peanut butter cookie. But it does have the crisscross pattern.

Well, it has a faint crisscross pattern. The pattern does disappear a little while baking.

The cookies are basically a sugar cookie. With brown sugar instead of granulated.

They taste like sugar cookies, they look like sugar cookies.

They were a so/so cookie. Nothing really special, but not horrible at all either.

CRISSCROSS COOKIES

4 Cups Sifted Flour

1 1/2 Teaspoons Baking Soda

2 Teaspoons Cream of Tartar

1 Teaspoon Salt

1 1/3 Cups Shortening

2 1/2 Cups Packed Brown Sugar

1 1/2 Teaspoons Vanilla

1 Teaspoon lemon Extract

3 Eggs, beaten

Sift together the flour, baking soda, cream of tartar and salt. Cream shortening. Add sugar gradually. Add vanilla, lemon and eggs, beat until light and fluffy. Add flour and mix until smooth. Chill several hours. Roll level tablespoons of dough into balls the size of a walnut. Place in greased baking sheet and press lightly with tines of a fork making a crisscross pattern. Bake in a 375 degree oven for 8 to 10 minutes.
