My mother was in town for the holidays. She specifically requested a meatloaf for dinner. She loves meat loaf, but can never seem to make it on her own. I remember some of the “meatloaf” we had growing up - it was horrible!

To start - I did not find any veal at the grocery stores I went to. I even looked for veal chops, not just ground and it was a no go. So I just added to the ground chuck amount. It feels like it is getting harder to find “specialty” meats anymore.


For the bread crumbs I used the Herb Bread I had made a few days before. This added some flavor to the bread.


I also liked the horseradish. It wasn’t very strong, but just enough to hint at something different in the loaf.


The recipe makes a huge amount. It called for one loaf to be made, but ultimately, I formed it into two loaves. So a lot of meat loaf!
OLD FASHIONED MEAT LOAF
2 Cups Fresh Bread Crumbs
3/4 Cup Minced Onion
1/4 Cup Minced Bell Pepper
2 Eggs
1 Pound Ground Chuck
1/2 Pound Ground Pork
1/2 Pound Ground Veal
2 Tablespoons Horseradish
2 1/2 Teaspoons Salt
1 Teaspoon Dry Mustard
1/4 Cup Milk
1/4 Cup Catchup
Start heating oven to 400 degrees. Prepare bread crumbs, minced onion, and bell pepper. With a fork, beat eggs, slightly. Lightly mix in meat, then crumbs, onions and pepper. Add horseradish, salt, mustard, milk and catchup. Combine lightly but well. Shape meat into loaf and place in a shallow baking dish. Bake for 1 hour and 10 minutes.
