Decadent Breakfast Cake

My husband and I host a bible study at our home every Monday. I provide coffee and a dessert each week for the attendees.



This week I decided to make this coffee cake. Sometimes you get a little tired of cookies.




I am glad I pulled this recipe! It was amazing!





The dough is nice and soft. Very similar to a cinnamon roll in texture and consistency.





The sauce is wonderful. The honey gives it some thickness. The cinnamon and sugar give it a little spicy flavor. The orange juice adds just enough acidity and a little of the citrus flavor.




The sauce really enhances the apples, which cook beautifully and are soft and delicious.





The best part is all the sauce in the bottom of the pan. It becomes a gooey and delicious topping once you invert the pan.



It does make a large coffee cake, so there is plenty to share.



LUCKY APPLE COFFEE CAKE

1 Package Cake Compressed or Active Dry Yeast

1/4 Cup Lukewarm Water

1/2 Cup Scalded Milk

1/4 Cup Spry or Shortening

1/4 Cup Sugar

2 Teaspoons Salt

1/4 Cup Cold Water

1 Egg, Slightly Beaten

3 Cups Sifted Enriched Flour

2 Tablespoons Sugar

1 Tablespoon Flour

1/2 Teaspoon Cinnamon

1/2 Cup Honey

2 Tablespoons Orange Juice

1 1/2 Cups Finely Diced Apples

2 Tablespoons Sugar

1/2 Teaspoon Cinnamon

1 Tablespoon Butter


Dissolve yeast in warm water. Combine scalded milk, shortening, 1/4 cup sugar, and salt. Add cold water, allow to warm to lukewarm. Blend in egg and dissolved yeast. Gradually add flour, mix thoroughly. Kneaded on a floured board a few strokes until smooth. Roll into a 12x8 inch rectangle. Combine 2 tablespoons sugar, 1 tablespoon flour, 1/2 teaspoon cinnamon, honey, and orange juice. Spread 2 tablespoons of mixture over the dough rectangle. Spread remainder of mixture into a greased 13x9 pan. Spread apples over dough. Combine 2 tablespoons sugar and 1/2 Teaspoon cinnamon. Sprinkle over apples. Dot with butter. Roll as for a jelly roll, starting at 12 inch side. Cut or tie off with strong thread into 1 inch slices. Place cut side down in prepared pan. Let rise for about 1 1/2 hours. Bake in a 400 degree oven for 25 to 30 minutes. Invert on a wire rack and cool for 5 minutes before removing pan.
