Cute Caramel Cookies

This recipe is a great example of taking one thing and making it into another.



Obviously turtles are pecans, caramel and chocolate. These cookies give those flavors, just in a different way.





The cookie part has a nice, subtle caramel flavor. They come out soft and quite lovely.




Arranging the pecans give the cookies the hint of a turtle shape.




I will say that I think the legs of the turtles should be changed a little. I think they would more resemble turtles if the leg pecans were cut in half, so then there would be four legs instead of two. It would take a little more work, but I think it would be cuter.




The icing is a rich, thick chocolate.




Once all combined, the cookie does have a nice traditional turtle taste, just a different look.



The cookies are fun, and have a nice presentation!




SNAPPY TURTLE COOKIES

1 1/2 Cups Sifted Flour

1/4 Teaspoon Baking Soda

1/4 Teaspoon Salt

1/2 Cup Butter

1/2 Cup Packed Brown Sugar

1 Egg

1 Egg Yolk, White Reserved

1/4 Teaspoon Vanilla

1/8 Teaspoon Maple Flavoring

Pecan Halves

CHOCOLATE FROSTING

2 Ounces Chocolate

1/4 Cup Milk

1 Tablespoon Butter

1 Cup Confectioners’ Sugar


Sift together flour, baking soda and salt. Cream butter and brown sugar well. Add whole egg and yolk, Beat well. Blend in vanilla and maple flavoring. Add dry ingredients gradually, mix thoroughly. Arrange pecan halves in groups of three on a greased baking sheet to resemble to head and legs of a turtle. Mold dough into balls. Dip the bottoms into the egg white and press lightly onto the nuts. Tips of the nuts should show around the dough ball. Bake in a 350 degree oven for 10 to 12 minutes. Cool on wire racks. Combine chocolate, milk and butter in the top of a double boiler. Heat over boiling water until the chocolate melts. Blend until smooth. Remove from heat and add confectioners’ sugar. Beat until smooth and glossy. Generously frost tops of cookies.
