Cool and Refreshing Dip

We have so many cucumbers right now! The garden is prolific.



This dip sounded like a great way to use several of them. I always am looking for things I can serve on football Sundays.




Soaking the cucumber in the vinegar and garlic salts does a few things. First, it infuses the cucumber with a little of the saltiness and garlic flavor. It also pickles them ever so slightly.



I did not use a sour cream sauce mix. Frankly, I couldn’t find one. So I used sour cream mixed with a small amount of milk to keep it loose.



I beat the cream cheese with the sour cream until it was quite smooth. I think doing this first helped, the cucumbers were not crushed by the beating process.



The dip was very nice. It was cool and crisp. I served it with a veggie tray (with more cucumbers!). It was a great addition to our Sunday football spread.



COOL AS A CUCUMBER DIP 2

2 Large Cucumbers

2 Tablespoons Cider Vinegar

2 Teaspoons Garlic Salt

1 Envelope Sour Cream Sauce Mix

8 Ounces Cream Cheese

1/4 Teaspoon Sugar

Hot Pepper Sauce


Peel, seed and chop cucumber in a small dice. Combine with vinegar and garlic salt. Refrigerate overnight. Prepare sour cream sauce according to package directions. Blend cucumbers with cream cheese, stir in sauce, sugar and hot pepper sauce to taste. Serve chilled with vegetables.
