Colorful Cookies

I am a huge fan of gum drops. I like the fruity ones, the spicy ones, the cinnamon ones. . .



There is just something about a gum drop that I really enjoy. Maybe one day I will figure out how to make them…





I saw gum drops at the grocery and bought them. In order to not just sit and eat all of them from the container, I searched for some recipes to use them in.



This cookie is packed full of all sorts of goodies, not just the gum drops.



The oats give the cookies some weight and thickness. Since there is no cinnamon or cloves, the cookies do not end up feeling like a traditional oatmeal cookie.



The coconut gives the cookies a little sweetness. My husband says he doesn’t like coconut, but he always eats the coconut things I make. So, of course, he turned up his nose when he saw me making these cookies. But then proceeded to eat quite a few of them.



The gum drops I purchased were the spiced kind. So you get some great flavor from them throughout the cookie.



The gum drops also provide beautiful pops of color. Each cookie has quite a few gum drop pieces, so if you are lucky and they distribute themselves well, there are different color drops.


And each color gum drop has its own flavor.



These were great, you should absolutely try them!



SUGAR PLUM DROPS

1 Cup Shortening

1 Cup Sugar

1 Cup Brown Sugar

2 Eggs, Beaten

1 Teaspoon Vanilla

1 Teaspoon Baking Soda

1 Tablespoon Cold Water

2 Cups Cake Flour

1 Teaspoon Baking Powder

1 Teaspoon Salt

2 Cups Rolled Oats

1 Cup Coconut

1 Cup Colored Gumdrops, Chopped


Cream shortening and sugars together. Beat eggs. Dissolve baking soda in water. Add with vanilla to beaten eggs. Combine egg mixture with shortening mixture. Sift flour with baking powder and salt. Stir into creamed mixture. Add remaining ingredients. Shape into small balls and place on a well greased cookie sheet. Bake in a 375 degree oven for 12 minutes.
