Coffee Cookies

I am a big fan of coffee. And I am not talking about fancy fro fro coffee. I mean, coffee - coffee flavored - not sweet, not cold. Just coffee.



I am also a big fan of coffee in things. So these are the perfect cookie for me!




They have a very nice coffee flavor, but it isn’t overpowering.




The cinnamon and nutmeg are the right spices. They really enhance the coffee, and the coffee enhances them.




The cookies are soft and cake like. They do not harden, but stay soft.



These cookies would go great with a cup of coffee as a nice not too sweet treat!



COFFEE AND SPICE DROPS1 Cup Shortening

2 Cups Brown Sugar

2 Eggs

1/2 Cup Cold Coffee

3 1/2 Cups Sifted Flour

1 Teaspoon Baking Soda

1 Teaspoon Salt

1 Teaspoon Nutmeg

1 Teaspoon Cinnamon


Cream shortening with sugar well. Mix in eggs. Stir in coffee. Sift in flour, baking soda, salt, nutmeg and cinnamon. Chill mixed dough at least 1 hour. Drop by rounded teaspoons 2 inches apart onto greased baking sheets. Bake in a 400 degree oven for 8 to 10 minutes. Cool on wire racks.
