Classic For A Reason

As I mentioned yesterday, my daughter has been doing an internship for the summer. Today is the last day and she wanted to bring a treat. I made these, along with the Wunder-Bar Cookies for her to take. They were immensely popular!



Peanut butter cookies seem to have been around forever. They are indeed a classic.




These cookies are the perfect example of a peanut butter cookie.





The recipe does not make a huge amount, around two dozen. So if you are looking for lots of cookies, you should probably double the recipe.




For our purposes, the amount was perfect. Especially since they all went with her to work. I can not have cookies in my house, or I will eat them!



I will say that the one I had was amazing. I was glad they were not in my house!



The cookies are full of peanut butter flavor, as they should be. The sugar used to make the crisscross gives the top of the cookies a lovely sugary crunch. The inside of the cookies are soft and stay that way!



This is a great recipe for a great treat!


PEANUT BUTTER COOKIES

1/2 Cup Butter

1/2 Cup Peanut Butter

3/4 Cup Sugar

1 Egg

1 Teaspoon Vanilla

1 1/4 Cups Sifted Flour

1/4 Teaspoon Baking Powder

1/2 Teaspoon Salt

Shelled Peanuts (Optional)


In a bowl, cream the butter until fluffy. Blend in the peanut butter. Gradually beat in sugar, egg and vanilla. Sift the flour, baking powder and salt together. Beat into the creamed mixture. Drop by teaspoonfuls onto a baking sheet. Flatten with a fork dipped in cold water. Press peanuts into each cooky if desired. Bake in a 350 degree oven for 10-12 minute. Remove to racks to cool.
