Citrus and Oats

I like an oatmeal cookie. My biggest issue with them is that I get tired of the raisins.



This recipe is a bit of a different oatmeal cookie.



First, no raisins. Second, no cinnamon.



The biggest difference is the orange. Using the orange rind and juice gives the cookie a nice citrus flavor throughout.



The orange rind also gives the cookies a little orange color. Just a little thread running through.




The cookies are very soft when they come out of the oven. They stayed soft for several hours.



The second day, even when stored in an airtight container, the cookies were quite crunchy.



These cookies have a great flavor and are pretty easy to make.



ORANGE OATMEAL COOKIES

2 Cups All Purpose Flour

2 Cups Sugar

4 Teaspoons Baking Powder

1 Teaspoon Salt

1 Teaspoon Nutmeg

1 Cup Shortening

2 Eggs

4 Teaspoons Grated Orange Rind

2 Tablespoons Orange Juice

3 Cups Rolled Oats


Heat oven to 375 degrees. Blend flour, sugar, baking powder, salt and nutmeg. Add shortening, eggs, orange rind and juice. Mix well. Stir in oats. Drop by level tablespoonfuls onto greased baking sheets 2 inches apart. Bake 12 to 15 minutes.
