Chocolate Snack Cake

Generally when cooking with applesauce you use less sugar. That doesn’t appear to be the case with this recipe.



The applesauce does add a ton of moisture to the cake.




I opted to not use the pecans. I served them at a get together and knew that one of my guests was allergic. I don’t think this changed the flavor that much.




The result is a soft, moist cake that has no need of frosting.




They aren’t all that fudgy though. I think there would need to be about double the chocolate to make it a fudge square or cake.



Don’t get me wrong, we still ate the cake, it was really good!



Apple Fudge Squares

2 Ounces Unsweetened Chocolate

1/2 Cup Shortening

1 Cup Sugar

2 Eggs, Well Beaten

2/3 Cup Applesauce

1 Teaspoon Vanilla

1 Cup Sifted Flour

1/2 Teaspoon Baking Powder

1/4 Teaspoon Baking Soda

1/4 Teaspoon Salt

1/2 Cup Chopped Pecans


Melt together chocolate and shortening. Blend in sugar, eggs, applesauce, and vanilla. Sift together flour, baking powder, baking soda, and salt. Stir into chocolate mixture. Stir in nuts. Spread in a greased 8x8 pan. Bake in a 350 degree oven for 35 to 40 minutes.
