Chicken Dinner

This is a simple but flavorful chicken dinner.

The chicken comes out very moist, the gravy adds lots of flavor.

The onion soup mix gives the chicken just the right amount of seasoning. My mother used onion soup mix as a seasoning growing up. Unfortunately, as she isn’t a great cook, it didn’t help much. That is not the case for this recipe though. It works!

The vegetables have plenty of time to soften up and soak in some of the flavor from the soup and onion soup mix. I would either add more vegetables or make a side dish though. There weren’t quite enough vegetables for a full side.

Overall a good dish. It’s simple and easy to put together. You can easily do other things while it’s cooking!

LAZY DAY CHICKEN

2 to 3 Pounds Whole Chicken Breasts

1/3 Cup All Purpose Flour

1 Package Dry Onion Soup Mix

1/3 Cup Sherry

10 ½ Ounces Condensed Cream of Chicken Soup

2 Medium Carrots, Cut into ¼ inch Slices

3 Ounce Can mushroom slices

2 Stalks Celery

Paprika

Oil a 15 x 10 inch pan. Place a large piece of foil in pan. Dredge chicken in flour and place in pan, skin side down. Sprinkle dry onion soup mix over the chicken. Combine wine, soup, carrots, mushrooms, and celery and spread over chicken. Dot with paprika. Cover with foil and bake at 350 degrees for 1 hour and 15 minutes.
