Cheesy Macaroni Salad

I know a lot of people don’t care for macaroni salad, but I quite enjoy it. There are tons of different varieties, so there is always something different to make.



This recipe was a new one for me. Basically, it macaroni and cheese served cold with a few veggies thrown in.


I had a hard time finding powdered cheese sauce mix by itself. Addmittedly, I used a box of Kraft Macaroni and Cheese for the sauce mix and the noodles.


I used the pickle relish I canned a few summers ago, it really added a nice flavor to the salad. And who knew pimientos were good for anything but olives! This is the second recipe that has called for pimientos, they add an interesting but not bad flavor.



My husband and daughter absolutely loved this. My husband even took the container of leftovers to work the next day. I thought it was a bit odd. The flavor was good, but it tasted so different from any macaroni salad I’ve ever had. If you like cheese, you will probably like this!


CHEESE AND MACARONI SALAD

8 ounces Elbow Macaroni, Cooked

2 Tablespoons Butter

¼ Cup Grated Parmesan

1 Cup Chopped Celery

¼ Cup Sweet Pickle Relish

¼ Cup Chopped Pimiento

1 Envelope Cheese Sauce Mix

½ Cup Mayonnaise

¼ Cup Grated Cheddar Cheese

¼ Cup Milk


While macaroni is still hot, stir in butter and parmesan cheese. Chill. Once macaroni is cooled, Combine it with celery, pickle and pimiento. Stir contents of sauce mix, mayonnaise, cheddar and milk. Add to macaroni. Toss to thoroughly combine. Serve Cold.
