Cheesy Disaster

I was hoping these would be like the Cheddar Bay Biscuits at Red Lobster. I don’t enjoy going to Red Lobster – we live in a coastal town so there are many, many options for fresh seafood. But I do love the Red Lobster biscuits!



Well, these were not that. They are very easy to put together drop biscuits. The problem is they don’t rise. They came out like flat cheesy discs. And the cheese near the bottom browns quite a bit.



I think just a bit of baking powder would help give them some body. Maybe I’ll try them again with baking powder.



EASY CHEESE BISCUITS

½ Cup Butter, Softened

2 Cups Flour

1 Cup Buttermilk

1 ½ Cups Shredded Cheddar


Cut butter into flour until mixture resembles coarse crumbs. Add remaining ingredients and stir well. Drop by tablespoonfuls, 2 inches apart, onto a large greased baking sheet. Bake at 425 degrees for 12 to 15 minutes.
