This recipe is a nice alternative to the basic cauliflower side dish.
The tomatoes and onions blend well with the seasonings and would honestly make a nice side dish on their own.
I steamed my cauliflower for about 10 minutes – I like my vegetables to have some texture and a little crunch.
The cheese and cracker crumb mixture provides a great crust. You get a bit of the cheesiness with each bite.
This was a good side dish that we will more than likely be making again!
BAKED CAULIFLOWER
1 Head Cauliflower, Broken Into Flowerets
1 ½ Cups Drained Canned Tomatoes
½ Cup Chopped Onion
½ Teaspoon Dried Oregano
½ Teaspoon Salt
1/8 Teaspoon Pepper
¾ Cup Grated Cheddar Cheese
¾ Cup Coarse Cracker Crumbs
Cook cauliflower for 20 minutes, until just tender. In a greased 2 quart casserole combine tomatoes, onion, oregano, salt and pepper. Cover with cauliflower. Mix cheese and crumbs; sprinkle over cauliflower. Bake in a 400 degree oven for 20 minutes.
