This recipe creates a very nice and rich sauce. There is a lot of butter!
The Italian Salad Dressing Mix gives the melted butter a lovely Italian like flavor.
The lemon juice gives the sauce a little acid. I think this heightens the Italian flavor.
The recipe calls for the chicken to be grilled.
It is still mostly like winter here - it was only in the 40’s yesterday. So I was not about to fire up the grill. Too cold outside for me!
So I baked the chicken in the oven. Because of this cooking difference, I added all the sauce to the pan instead of just basting the chicken every once in a while.
The result was chicken baked in a lovely buttery sauce.
The chicken was nice and moist. And it had a lovely buttery flavor.
It really was yummy.
CHICKEN AH YUM
1/2 Pound Butter
2 Envelopes Italian Salad Dressing Mix
1/3 Cup Lemon Juice
4 Split Chicken Breasts
Melt butter in a small saucepan. Stir in salad dressing mix and lemon juice. Cut chicken breasts in halves; brush both sides with sauce. Place chicken, skin side down on a hot grill, about 10 inches above the hot coals. Grill, turning and basting often with the sauce, for 40 minutes or until chicken is tender and richly glazed.
