Breakfast Meat

So this is the recipe you make when you want corned beef hash, but you want to make it more complicated.



I got the corned beef in the deli section. I had them cut it about 1/4 inch thick, so two slices was more than enough. You could absolutely use left over corned beef as well.




The mixture does not really stick together all that well. You are supposed to form this into cakes, but it is kind of hard to do.



I added a tablespoon of flour to help make the mixture stick. This did help a little, but they still fell apart a bit while cooking.



So you get a corned beef hash flavor, but the chunks are larger. You don’t really taste the egg at all.



It wasn’t a bad breakfast meat option.



CORNED BEEF AND POTATO CAKES

1/4 Pound Cooked Corned Beef

1 Cooked Medium Potato

1 Egg

1/4 Teaspoon Salt

Dash Pepper


Chop corned beef and potato. Combine with egg and seasonings. Shape into cakes and brown.
