Bread Crumb Onion Rings

I served these onions with the French Fried Shrimp and Hush Puppies.



I mentioned before that we don’t eat a lot of fried food. Then I made three fried things in one meal! I know, it’s a little crazy. But I figured why not.



These are different from any onion ring I have ever made.



They aren’t breaded at all. No batter. . .



Instead, they are crusted with bread crumbs.



The bread crumbs stick mostly to the onions. Admittedly, a good portion of the crumbs fell off during the frying.



But that was okay. What did remain was nice and crisp.



It was an interesting take on an onion ring. You still got the lovely sweet onion without a thick batter.



FRENCH FRIED ONIONS

1 1/2 Pounds Bermuda Onions

1 Egg White, Slightly Beaten

1/3 Cup Milk

1/2 Teaspoon Salt

1/8 Teaspoon Pepper

3/4 Cup Fine Dry Bread Crumbs

Fat


Peel onions under cold water and cut into 1/3 inch thick slices. Slash each slice to center and pull rings apart. Combine egg white and milk and dip onions into this mixture. Dust with salt and pepper. Roll in bread crumbs. Place in deep hot fat and fry until browned.
