Better Than Expected

I love a simple dinner recipe. Something that can be whipped up quickly but still tastes great.



I was a little concerned with this recipe, but only after I started cooking it.




The ham, pineapple, and bell peppers mix nicely and are all the right level of doneness. So no issues there.




It was the sauce that was concerning. It was insanely sweet!



So here I was with this somewhat thick, super sweet, pineapple flavored sauce. It did not taste appealing on its own.



I knew my husband was not going to like it. He likes his ham salty, not sweet.


But I went ahead and served it anyway.



Imagine my surprise - when you serve the ham, vegetables, and sauce with the rice everything gets tones down.



It was still on the sweet side, but no where near as sweet as when I just tasted the sauce.



It was surprising, but we actually really enjoyed the dish. It was simple, fast to make, and surprisingly delicious!


HAM POLYNESIAN

3 Cups Cooked Ham Cut Into Pieces

2 Tablespoons Butter

1 Can Pineapple Tidbits

2 Medium Bell Peppers, Cut Into Strips

1/2 Cup Brown Sugar

2 Tablespoons Cornstarch

1/2 Cup Vinegar

1/2 Cup Chicken Bouillon

2 Teaspoons Soy Sauce

3 Cups Cooked Rice


Brown the ham pieces lightly in butter. Add pineapple with the syrup and bell pepper strips. Cover and simmer 15 minutes. Mix brown sugar and cornstarch. Add vinegar, bouillon and soy sauce. Add to ham mixture. Stir until thickened. Serve over rice.
