Best Frosting Ever!

This cake has great flavor and was super moist!



The cake itself is so moist! It has a great buttery flavor as well.





The walnuts are a great addition, but not too much. They provide just enough texture. And a great walnut flavor.



Creating three layers makes the cake look impressive as well. Who doesn’t love a three layer cake!





The best part, by far, was the icing. Wow, it tastes amazing!



I am a big fan of cream cheese icing. The mix of cream cheese and butter give the icing a super creamy texture.



Adding the coconut gives the cake a little crunch.




Sprinkling the coconut on the sides of the cake gives you the wow factor to go along with the three layers.



I served the cake at a party I had over the weekend. Several of my guests went back for seconds, it was that good!



ITALIAN CREAM CAKE

1/2 Cup Butter

1/2 Cup Shortening

2 Cups Sugar

5 Egg Yolks

2 Cups Flour

1 Teaspoon Baking Soda

1 Cup Buttermilk

1 Teaspoon Vanilla

1 Small Can Coconut

1 Cup Walnuts or Pecans

5 Egg Whites

ICING

8 Ounces Cream Cheese

1/4 Cup Butter

1 Box Powdered Sugar

1 Teaspoon Vanilla


Cream butter and shortening. Add sugar, beat until smooth, add egg yolks and beat well. Combine flour and baking soda, adding alternately with buttermilk. Stir in vanilla, coconut and nuts. Fold in egg whites that have been beaten stiffly. Pour into three 8 inch pans that have been greased and floured. Bake in a 350 degree oven for 25 minutes. Blend cream cheese and butter. Add powdered sugar and vanilla. Cream well. Frost when cake is cool.
