Beef Casserole

Sometimes a casserole is just an great idea. They are relatively simple. Usually quick to make. And pretty filling for the most part.



This casserole recipe is all of those things. Simple, quick and pretty filling.




The beef stays fairly moist throughout the cooking process.



I did have a few sections of rice that were not cooked as much as I would have like. Mostly is was soft. . . mostly.



The beans were an interesting touch. They don’t seem like a normal ingredient to go with a beef casserole. But they do work with this dish.




The spices are right on as well.





I have made pilau in the past with mower vegetables. I do wish this dish had some pepper or celery or something to give it a little more. . . something.



I do think the dish was a success. It was easy to make, it was quite filling, and there was plenty to feed the family and have some leftovers!



BEEF PILAU

1 Pound Round or Chuck Steak

2 Tablespoons Butter

1 Large Onion, Finely Chopped

1 Teaspoon Salt

1 Cup Packaged Quick Cooking Rice

1 Large Can Tomatoes

1 Large Can Red Kidney Beans

10 Ounce Beef Consommé

1 Teaspoon Chili Powder

1/4 Teaspoon Oregano

1 Teaspoon Salt


Cut meat into 1 inch cubes. Heat butter in a skillet. Add onions, salt and meat, brown. Fill a 2 quart casserole with a layer of meat, then rice, tomatoes and beans. Repeat. Combine consommé, chili powder, oregano and salt. Pour into casserole. Bake in a 350 degree oven for 1 hour.
