Beans and Rice

I grew up with a dad who loved cajun food. So red beans and rice were a thing he enjoyed.



Of course, my mother couldn’t cook to save her life. So it wasn’t made in my house. At least not from scratch. She would by Zataran’s Red Beans and Rice box mix.



Not the best, but passable.



I have never had pinto beans and rice though. So when I saw this recipe I definitely wanted to give it a try.



It took about four hours for the beans to get soft. This is pretty normal when using dried beans. I also wanted them to still have some firmness to them, nothing worse than mushy beans!



The ham was a nice addition to the dish. It added the nice pork element. I do think a sausage would have been nice though. I guess that would have made it dirty rice though. . .



I served this as a side dish with the Baked Stuffed Frankfurters. It was a great side.

It is hearty enough that it could be served as a main. I think my dad would have approved!


PINTO BEANS AND RICE

1/2 Cup Dried Pinto Beans

3 Cups Ham Stock

1/2 Cup Chopped Cooked Ham

1/2 Cup Rice


Soak beans in ham stock for 1 hour. Bring to a boil and cook until beans are al dente. Add ham and rice. Cover and cook for 20 to 30 minutes until the rice is tender.
