I don’t mean basic in a good way. Unfortunately, this meatloaf was underwhelming.
To start, there was too much salt. It doesn’t seem like a lot – a teaspoon and a half – but it was too salty.
The best way I can describe this is an oversize hamburger. The meat was a little tough, not at all moist. And it was just missing something.
I think we are spoiled by the good meatloaf I usually make. This needed something, anything, to make it a little more interesting.
The bread crumb crust was nice though. I enjoyed the crisp and may use the method on a more flavorful loaf at another time.
I can always tell how much my husband likes a dish by how soon he puts away the leftovers. 30-40 minutes after dinner – he liked it okay. Immediately after dinner – he loved it. Meatloaf still in the pan at bedtime – don’t make the recipe again. Well, the meatloaf was still in the pan when I went to bed, so . . . .
CRUSTY MEATLOAF
1 ½ Pounds Ground Beef
1 Egg, Slightly Beaten
½ Cup Bread Crumbs
½ Cup Water
2 Tablespoons Chopped Onion
1 ½ Teaspoons Salt
1 ½ Cups Bread Crumbs
Mix all ingredients (except 1 ½ Cups bread crumbs) and form into a loaf. Press 1 ½ Cups bread crumbs into top of the loaf. Bake at 350 degrees for 1 hour.
