I love making my own pasta! It really seems to impress people, but I’m not sure why!
Making your own pasta is actually pretty easy, especially if you have the right tools.
I have a Kitchen Aid mixer with all sorts of attachments. My husband bought it for me for our second Christmas as a married couple. I don’t mind getting kitchen appliances for Christmas – I use them! Especially when they are nice ones like the mixer.
About year 6 or 7 of our marriage he bought me the pasta making attachments. There are three attachments, one for rolling the dough into strips, one for spaghetti, and one for linguini. These attachments save so much time when preparing the pasta! They are well worth the cost!
The dough mixed up very easily. I used the dough blade for the Kitchen Aid and didn’t have to knead at all. The dough is nice and elastic, not at all stick, and very easy to work with. I did add an additional tablespoon of olive oil to get the consistency I wanted.
The pasta cooks up in under five minutes. It was very smooth and tasted wonderful!
EGG PASTA DOUGH
3 ½ Cups Sifted All Purpose Flour
5 Large Eggs
1 Tablespoon Olive Oil
1 Teaspoon Salt
Mound the flour in a large mixing bowl; scoop out the center to form a well. Break the eggs into a deep bowl, beat them with the oil and salt, then add them to the center of the flour well. Working with clean fingers, mix the flour into the eggs a little at a time until it is thoroughly combined; knead it with both hands until it is firm and smooth to the touch.
Dip a clean cloth in warm water, wring it out well, wrap the ball of dough in it. Set aside to rest for 30 minutes.
Using a pasta making machine, roll the dough into sheets to a thickness suitable for the kind of pasta you want to make.
Pasta can be used immediately – cook in boiling water 3-5 minutes.
Freeze it – lasts up to 3 months
Dry it – Lasts up to 1 year in sealed container
