Banana Cookies

I had some bananas that were turning. I didn’t want to make banana bread, so I searched my recipe database and found this recipe. It was the perfect use for my aging bananas.



The cookies come out nice and soft. They remain that way for at least three days, which is all it took for these cookies to disappear.




The oats give the cookies some heft and substance.




For the nuts I used walnuts. I think walnuts go very nicely with banana.




The cinnamon and nutmeg season the cookies perfectly. They almost have the banana bread flavor to them.



I gave some of the cookies to some friends, who loved them. I had my husband take the remaining cookies to his work. They were gone within an hour, so they must have been good!



BANANA OATMEAL COOKIES

3/4 Cup Shortening

1 Cup Sugar

1 Egg, Beaten

1 1/2 Cups All Purpose Flour

1/2 Teaspoon Baking Soda

1 Teaspoon Salt

1 Teaspoon Cinnamon

1/4 Teaspoon Nutmeg

1 3/4 Cups Rolled Oats

1 Cup Mashed Banana

1/2 Cup Chopped Nuts or Raisins


Heat oven to 400 degrees. Place all ingredients in a mixing bowl. Beat well until blended. Drop by rounded teaspoonfuls of dough 1 1/2 inches apart on baking sheets. Bake 12 to 15 minutes.
