Bacon Makes Everything Better!

Who doesn’t love bacon? Well, my daughter, but she’s just strange that way. I said in one of my previous blogs that we do a big Super Bowl party every year. Well, every Sunday leading up to the Super Bowl we have a smaller version for ourselves. Basically I make a few hors d’oeuvres, a veggie tray and something desserty and lay it out. Football Sunday – we sit and graze all day on the munchies prepared. I am always looking for dips, spreads and sauces to make the Sunday’s food not seem monotonous.

This Bacon and Tomato Spread will be a Sunday staple!

It’s really a very simple recipe. There aren’t many ingredients and it can be made in advance – always a good thing. I’m thinking it would be a great way to use leftover bacon too. Of course, who ever has leftover bacon?!

The recipe calls for it to be served with veggies, but I think it’s a little thick for that. I served it with Club crackers, but it would work beautifully with a heartier cracker too.

You get a lot of the fresh tomato flavor with just a subtle hint of the mustard. There is a nice crunch from the green pepper and bacon.

Really yummy!

BACON AND TOMATO SPREAD

1 Package (8 ounces) Cream Cheese, Softened

2 Teaspoons Prepared Mustard

½ Teaspoon Celery Salt

6 Slices Bacon, Crisp Cooked, Crumbled

1 Medium Tomato, Chopped

¼ Cup Finely Chopped Green Bell pepper

Stir together cream cheese, mustard and celery salt. Stir in bacon, tomato and green pepper. Cover and Chill. Serve with vegetables.
