Apple Streusel Muffins

I like having alternatives for breakfast. Sometimes, a nice pastry or muffin is what is called for.



I had an abundance of apples - for some reason no one was eating them.




I didn’t want them to go to waste, so I searched my recipes and found this one.




The recipe whips up very quickly, so you could absolutely make these in a hurry in the morning.



The batter isn’t too sweet, which I like. You really get most of your sweetness from the apples.




The streusel was quite nice and also very simple.



There are a lot of apples so you get an apple bite with every bite of muffin. The muffin itself is soft and moist.



Good muffins, and they are super quick to make.



APPLE MUFFINS

2 Cups Flour

1/2 Cup Sugar

3 Teaspoons Baking Powder

1/4 Teaspoon Salt

1 Cup Chopped Apples

1 Egg, Beaten

1 Cup Milk

3 Tablespoons Melted Butter

1/3 Cup Brown Sugar

1/2 Teaspoon Cinnamon

1/3 Cup Chopped Nuts


Sift together dry ingredients and then toss with apples. Add combined liquid ingredients, mixing just enough to moisten. Turn into buttered muffin pans. Mix brown sugar, cinnamon and nuts. Sprinkle on top of muffins. Bake in a 400 degree oven for 15 minutes.
