Apple Chicken

This is an interesting take on a baked chicken recipe.



The chicken cooks well. It is moist and perfectly seasoned. I really like the addition of the nutmeg and ginger. Those spices blend well with the apple glaze.



The glaze is really lovely. The apple juice is nice and sweet, but the lemon juice adds a bit of tartness.



The green apples provide a nice little tart bite. The red delicious apples give you a touch of the sweet apple flavor.



I misread the recipe and added the red delicious apples to the glaze at the end of the cooking time. This made them just a touch soft, but not completely cooked through.



While it was a mistake, I think it worked well. I’m not sure I would have like the apples cold over the chicken.



Overall this was a lovely dish and a great dinner!



APPLE GLAZED CHICKEN

2 Chickens, 3 Pounds Each

Salt and Pepper To Taste

1/2 Teaspoon Ginger

1/2 Teaspoon Nutmeg

2 Tablespoons Oil

1 Onions, Minced

1 Cup Apple Juice

2 Tablespoons Lemon Juice

2 Tablespoons Honey

1 Tart Green Apple, Peeled and Minced

3 Red Delicious Apples, Cut in Eights


Cut chicken into pieces. Season with salt, pepper, ginger and nutmeg. Spread oil in a 13x9 baking dish. Add onion to baking dish. Arrange chicken, skin side up, on top of onions. Combine apple and lemon juice, pour 1/4 of juice over chicken. Bake uncovered in a 375 degree oven for 40 minutes. Add honey to remaining juice. In a saucepan, bring juice mixture to a boil with minced green apple. Arrange cooked chicken pieces on serving platter. Combine pan drippings with cooked sauce, stir to blend. Add red delicious apples to serving platter with chicken. Spoon sauce over chicken and apple slices.
