Another Coffee Cake Variation!

A few weeks ago I made the Master Recipe for the Coffee Cake Mix. So I thought I would try another variation. This one takes a bit more time to put together, but it’s absolutely worth it.



Apple and cheddar cheese go together so nicely. They definitely work in this recipe.




The apples are interesting. Mixed with the cinnamon candies gives them a very interesting cinnamon flavor. It isn’t too strong but you can taste it!



The coffee cake mix did not disappoint. The cake was just as light and fluffy two weeks later as it was the first time I used it.




The oatmeal topping gives a nice bit of crunch and sweetness to the cake.



I doubled the recipe this time so we had a coffee cake for home and one for my husband to take to work with him. He is the boss and likes to bring in treats for the people who work for him. I am more than happy to oblige, I really do like cooking!

APPLE CHEESE COFFEE CAKE

2 Cup Coffee Cake Mix

2 Eggs

2/3 Cup Sugar

¾ Cup Milk

¼ Cup Red Cinnamon Candies

1 Cup Water

¼ Cup Sugar

¾ Cup Brown Sugar, Divided

1 Large Apple, Peeled, Cored and Sliced

½ Cup Grated Cheddar Cheese

¾ Cup Sifted Flour

½ Cup Rolled Oats

¼ Cup Butter


Combine cinnamon candies, water, ¼ cup sugar and ¼ cup brown sugar in a saucepan. Heat over medium heat. Add apple slices and cook I syrup until clear and shiny. Drain and reserve.


Beat eggs until fluffy; gradually add sugar. Combine egg mixture with coffee cake mix. Beat for 2 minutes until light and fluffy. Add milk, ¼ cup at a time, beating well after each addition.


Coat grated cheddar with flour and add to prepared cake mix. Stir to combine. Spread batter into a buttered 8” dish.


Mix rolled oats, ¼ cup flour, ½ cup brown sugar, and butter. Sprinkle over batter in pans. Top with candied apple slices.


Bake in a 350 degree oven for 35 minutes.
