An Interesting Side Dish!

I have made hundreds of stuffings/dressings over the years. I have never made one with water chestnuts before.



I used just plain white bread for the bread cubes. I toasted the bread lightly in the oven before cubing it.




The seasonings are great – perfectly balanced. The poultry seasoning and the chicken stock give it the chikeny flavor.



The water chestnuts provide a lovely crunch. In hindsight I wish I had maybe diced them. I liked the crunch and flavor, but maybe it would have been nicer had it been smaller pieces. I think this would have helped it blend in better too.



Overall this was a good side dish. I served it with the Wendy’s Chicken, a very nice combination!



WATER CHESTNUT DRESSING

½ Loaf Lightly Toasted Cubed Bread

1 ½ Cups Chicken Stock

2 Tablespoons Butter

¼ Teaspoon Pepper

½ Teaspoon Salt

1 Small Onion, Chopped

1 Can Water Chestnuts, Sliced Thin

1 Teaspoon Parsley Flakes

1 Tablespoon Poultry Seasoning


Place bread in well buttered casserole dish. Heat stock, pour over bread. Mix remainder of ingredients and toss with bread. Bake in casserole for 1 ½ hours at 350 degrees. When golden brown, cover with foil and continue cooking.
