I wish I could have this coffee cake every morning! It is soft and crispy and absolutely delicious.
I made this coffee cake from the COFFEE CAKE MIX recipe.
The topping comes together easily and quickly. Once baked it is crisp and has a consistency of candied pecans.
The cake is soft and moist.
It goes so well with coffee, it’s a great excuse to drink coffee and eat cake!
BROWN SUGAR CINNAMON COFFEE CAKE
2 Cup Coffee Cake Mix
2 Eggs
2/3 Cup Sugar
¾ Cup Milk
TOPPING
¼ Cup Butter
1 Cup Brown Sugar
¼ Teaspoon Salt
3 Tablespoons Flour
1 ½ Cups Chopped Pecans
½ Teaspoon Cinnamon
½ Teaspoon Nutmeg
Beat eggs until fluffy; gradually add sugar. Combine egg mixture with coffee cake mix. Beat for 2 minutes until light and fluffy. Add milk, ¼ cup at a time, beating well after each addition. Spread batter into a buttered 8” dish. Combine all ingredients for topping, break up with a fork. Sprinkle onto cake mixture. Bake in a 350 degree oven for 35 minutes.
