Almond Butter Cookies

Writer: Amanda KennedyAmanda Kennedy

A few months ago I found a beautiful copper cookie press at an estate sale. The price tag was still on it. The box looked like it had never been opened.

I had planned on making spritz cookies around Christmas time, but life said otherwise. I just never got the chance.

My daughter and I made these cookies together. I am trying to teach her more cooking skills. So this was something new to her.

The cookies themselves are lovely. You get a lot of the butter flavor which goes very nicely with the almond flavoring.

The cookie press worked great. Honestly, the copper press worked nicer than the Pampered Chef cookie press I have. The dough came out of the copper tube much easier than it ever did out of the plastic tube.

I decided to make my cookies plain. You could absolutely decorate them with colored sugar or sprinkles.

SPRITZ

1 Cup Softened Butter

2/3 Cup Sugar

3 Egg Yolks

1 Teaspoon Almond Flavoring

2 ½ Cups Sifted Flour

Thoroughly combine butter, sugar, egg yolks, and flavoring. Work in flour with a wooden spoon or with hands. Force dough into cookie press. Press onto ungreased baking sheet in desired shapes. Bake in a 400 degree oven for 7 to 10 minutes. Sprinkle with colored sugar if desired.
