A New Way To Make Potato Salad

Everyone has had the traditional potato salad – mayonnaise and mustard. Sometimes eggs, sometimes celery. Most of the time onion. There are hundreds of recipes for this type of potato salad out there.



A lot of people have even had the hot German potato salad. It’s a little different, vinegar instead of mayonnaise, but the main components are the same.



This is not those recipes! First, while is does have vinegar, it is not served hot. Secondly, there is butter in it. I have never made a potato salad with butter in it. So it was an interesting touch.



The salad has a very interesting flavor with the vinegar. I liked it, and honestly have never had anything like it.



Of course, I hated that there were hard cooked eggs in it. I don’t care for hard cooked eggs at all! Really I don’t like eggs period!



But this was great overall. A very enjoyable side dish!




POTATO SALAD

2 Cups Diced Cooked Potatoes

1 Large Onion, Finely Chopped

2 Hard Cooked Eggs, Diced

2 Tablespoons Water

¼ Teaspoon Salt

Dash Black Pepper

2 Tablespoons Butter

2 Tablespoons Vinegar

½ Cup Minced Parsley


Mix potatoes, onion and eggs together lightly. Heat water, salt, pepper and butter until butter is melted. Add vinegar. Pour over potato mixture, stir to combine. Chill. Serve topped with parsley.
