A Modified Ice Cream Sandwich

To start, I am not a fan of peaches, so I wasn’t thrilled when I saw this recipe called for peach jello. I really think you could change the peach out for any flavor. Maybe even two flavors for a layered effect.



These are kind of like an ice cream sandwich. The graham crackers go on either sides of the filling, so you can hold them easily.





The gelatin mixed with the whipped topping is very smooth and creamy. The peach flavor wasn’t even that bad . . .



Honestly, they were oddly good. A little hint that isn’t in the recipe – let them cool a bit before trying to cut them. You will struggle to get them out of the pan when they are still super frozen. It’s a little easier if you leave them out for 5 or 10 minutes first.



GELATIN-WICHES

3 Ounce Peach Flavored Gelatin Packet

1 Cup Boiling Water

1 Container Whipped Topping

14 Graham Crackers, Separated


Dissolve gelatin in boiling water and chill until slightly thickened. Fold in whipped topping. Place graham crackers in baking dish. Spread gelatin mixture over crackers, pressing lightly and smoothing the edges Top with remaining crackers. Freeze until firm.
