I am not a huge fan of daiquiri’s to be honest. I don’t like frozen drinks in general, but I am really not a fan of fake strawberry flavor.
I was pleasantly surprised with this punch! It was super light and very refreshing. And you don’t really feel the alcohol until you stand up later!
I could not find a frozen daiquiri mix, but I did find daiquiri mix as a liquid. Since the recipe calls for thawed frozen mix, I thought the store bought mix would be fine. And it worked well.
I made the punch in two batches, one with the rum, and one virgin style for my 14 year old daughter. Instead of rum, I just added water.
The lime slices add just enough citrus to the sweet punch to not make the sweetness overwhelming. The addition of the club soda gives it a great sparkling taste.
This would be a great punch to make up for a party, or like us, just a weekday evening where alcohol was required!
DAIQUIRI PUNCH
½ Cup Light Corn Syrup
2 Cups Light Rum
12 Ounces Frozen Daiquiri Mix, Thawed
2 Bottles (28 ounces each) Carbonated Water
Ice Ring
1 Lime, Cut into Slices
Mix corn syrup and rum in a punch bowl; stirring to blend. Stir in daiquiri mix.
Just before serving, add carbonated water, slide in ice ring and add lime slices.
