A Little Underwhelming

May husband always talks about how his mother used to make potato leek soup and how wonderful it is.



I like potato soup. I think leeks are fine. I just really don’t see the appeal.



There really isn’t a whole lot to the soup. I thought the addition of the chili sauce would give the soup a little depth, maybe a little spice. Well, it didn’t.



The soup was boring.



The potatoes were cooked nicely. The leeks were cooked nicely. It had enough salt.



It was just boring. Underwhelming. Nothing to write home about.



My husband really liked it. . .




POTATO LEEK SOUP

3 Tablespoons Butter

1 Cup Sliced Leeks

4 Cups Cold Water

1 Bay Leaf

2 Tablespoons Chili Sauce or Ketchup

2 Medium Potatoes, Diced

1/2 Small Onion, Grated

1/4 Cup Chopped Celery

2 Tablespoons Minced Parsley

1 Teaspoon Salt

1/8 Teaspoon Pepper

1 Cup Milk


Melt butter, add leeks and cook but do not brown. Add water, bay leaf and chili sauce. Cover and simmer for 20 minutes. Add potatoes, onion, celery, parsley, salt and pepper. Cook until potatoes are soft. Add milk and heat to boiling. Serve topped with croutons.
