I would not consider this bread one of my successful bread making attempts.

I don’t think I did anything wrong. But the end result was quite unimpressive.



I opted not to use the caraway seeds. I am not a huge fan of bread with seeds in it, so I just didn’t want to use them. I am not sure they would have added anything had I added them in.




I used an extra sharp cheddar for the cheese portion. I enjoy the taste of the extra sharp cheese. I usually prefer the white cheddar when I am intent on just snacking on cheese. But I thought the yellow would add a little color to the bread.


The dough was very thick. I mean, very thick. So I was unimpressed with my rise. It did double, but it did not get light and fluffy. Or airy. At all.


Thick created a very dense bread. I felt and ate very heavy. Even spreading it with butter didn’t help all that much.

So, this recipe created a very dense, dry, unexceptional bread. It was quite disappointing.

WONDERFUL CHEESE BREAD
1 1/2 Cups Warm Water
2 Packages Yeast
2 Tablespoons Sugar
2 1/4 Teaspoons Salt
6 1/2 Cups Sifted Flour
2 Eggs, Beaten
2 Cups Grated Sharp Cheese
1/4 Cup Caraway Seeds (Optional)
Melted Butter
Sprinkle yeast into warm water in a large mixing bowl. Stir in sugar and salt until dissolved. Add 2 cups flour, beating well with a spoon. Add eggs, cheese and caraway seeds. Beat in 4 cups flour to make a soft dough. Turn onto a floured board. Cover with an inverted bowl and rest 10 minutes. Knead in enough remaining flour to produce a smooth, elastic dough with small blisters under its surface. Place in a greased bowl, turning to coat, cover and allow to rise 1 1/2 hours. Punch down. Let rise 1 hour. Punch down again and turn onto lightly floured board. Cover with an inverted bowl and let rest 10 minutes. Divide dough into four portions equal in size. Roll into a 12 inch long rope. Twist two ropes together and seal ends. Lay in a bread pan. Repeat with remaining two ropes, laying them in a second pan. Cover and let rise 45 minutes. Brush tops with melted butter. Bake 35 minutes in a 350 degree oven. Brush with additional butter, remove from pans carefully.
