A Different Take On A Classic!

Ambrosia Salad was a huge thing in the MidCentury. Apparently there were different versions.



I have had the jellied version with the marshmallows before. I know it’s old fashioned but I have to admit I kind of like it.




So this is not that Ambrosia Salad. This is more fresh and natural.



The lemon juice helps preserve the fruit and keeps it from turning brown. It does give you a little tang, but it isn’t too bad. I think this could be avoided by rinsing the fruit after coating it with the lemon juice. Or soaking the fruit in lemon water.



The whipped salad dressing coats the fruit nicely. You get the lovely taste of the fresh fruit and the tart sweetness of the dressing. The coconut adds a bit of crunch.



Overall a very good salad.



AMBROSIA SALAD

2 Bananas, Sliced

¾ Cup Diced Orange

½ Cup Seedless Grapes

¼ Cup Chopped Dates

3 Tablespoons Lemon Juice

¼ Cup Grated Coconut

Whipped Cream Dressing



Combine fruits; sprinkle with lemon juice. Chill. Add whipped cream dressing and toss lightly. Serve garnished with coconut.
