A Different Peanut Butter Cookie

My favorite peanut butter cookie recipe is the absolute simplest recipe. 1 cup of sugar, 1 egg, and 1 cup of peanut butter. I absolutely love it and they are so easy to make.



This recipe was a touch more involved, but the end result was wonderful.




The brown sugar gives you a much darker cookie than if you used granulated sugar. The peanut butter is just enough for the peanut taste, but it isn’t overwhelming.




The apple is the surprise. When you eat the cookies you get little bursts of the sweet apple.




I did dip my fork in sugar while pressing. When I didn’t do this the fork stuck in the batter a bit. The recipe didn’t call for it, but I think it worked nicely. It also gave a little of the crystallized sugar on the top, which was nice.




They really are very pleasant and delicious cookies.



PEANUT BUTTER APPLE COOKIES 24

1 1/2 Cups Sifted Flour

1/2 Teaspoon Baking Soda

1/2 Teaspoon Salt

1/2 Teaspoon Cinnamon

1/2 Cup Shortening

1/2 Cup Peanut Butter

1/2 Cup Sugar

1/2 Cup Packed Brown Sugar

1 Egg

1/2 Teaspoon Vanilla

1/2 Cup Grated Raw Apple


Sift together the flour, baking soda, salt and cinnamon. Cream the shortening with the peanut butter and sugars. Beat in egg and vanilla. Fold in apple. Gradually add dry ingredients. Chill. Mold into balls using a rounded teaspoonful of dough for each. Flatten with a fork on baking sheets. Bake in. 375 degree oven for 12 to 15 minutes.
