Pizza Pie
2 Cups Bisquick
1/2 Cup Water
1/2 Cup Grated Parmesan Cheese
2 Cups Drained Cooked tomatoes
1/2 Pound Nippy Cheese, Cut Up
Anchovies, Sardines or Salami, Cut Up
Pepper
Oregano
2 tablespoons Cooking Oil
1/2 Onion, Grated
Heat oven to 425 degrees. Mix bisquick and water. Knead for 1 minute. Roll into a circle 1/4 inch thick. Place on baking sheet. Pinch edge to make a slight rim. Arrange remaining ingredients on dough in the order listed. Bake 20 o 25 minutes.
1 Pound Ground Beef
1/2 Cup Uncooked Rice
1 Teaspoon Salt
1/8 Teaspoon Pepper
1 Onion, Sliced
1/2 Green Pepper, Sliced
1 Tablespoon Shortening
2 1/2 Cups Tomato Juice
Dash Nutmeg
Salt and Pepper
Combine ground beef, rice, salt and pepper. Form into 1 1/2 inch diameter balls. Place in a baking dish. In a skillet, brown the onions and green pepper in shortening. Add tomato juice, nutmeg, salt and pepper. Pour over meat balls. Cover. Bake in a 350 degree oven for 1 hour.
Pork Pie
2 Pounds Pork Shoulder
2 1/4 Cups Boiling Stock or Water
1 Teaspoon Salt
1 Bay Leaf
2 Cups Cooked Carrots
6 Small Cooked Onions
1 Recipe Plain Pastry
Cut pork into cubes, brown in fat. Add stock, salt and bay leaf. Cover and cook until meat is tender, about 1 hour. Thicken gravy with flour mixed into a paste with water. Add carrots and onions. Pour into a baking dish. Cover with pastry. Bake in a 450 degree oven for 20 minutes.
Pork Sausage and Potatoes
2 Pounds Pork Sausage Links
4 Medium Potatoes
1 1/2 Tablespoons Butter
1/2 Cup Rich Milk
1/2 Teaspoon Salt
1/8 Teaspoon Pepper
1 Egg, Well Beaten
Prick sausages and arrange them in the bottom of a baking dish. Boil potatoes until tender, peel, mash well, and beat thoroughly with butter, milk, salt and pepper. Spread potatoes over sausages and cover evenly with beaten egg. Bake in a 350 degree oven for 30 minutes.
Potato Chowder
1/3 Cup Diced Salt Pork
2 Cups Diced Potatoes
1 Cup Diced Turnips
1 Cup Diced Carrots
1 Medium Onion, Minced
1 Stalk Celery, Cut Into Small Pieces
1 Green Pepper or Pimiento, Diced
2 Cups Thin White Sauce
Fry pork and brown vegetables in fat. Cover with boiling water and cook until tender. Add white sauce to vegetable mixture; season to taste.
Potato Leek Soup
3 Tablespoons Butter
1 Cup Sliced Leeks
4 Cups Cold Water
1 Bay Leaf
2 Tablespoons Chili Sauce or Ketchup
2 Medium Potatoes, Diced
1/2 Small Onion, Grated
1/4 Cup Chopped Celery
2 Tablespoons Minced Parsley
1 Teaspoon Salt
1/8 Teaspoon Pepper
1 Cup Milk
Melt butter, add leeks and cook but do not brown. Add water, bay leaf and chili sauce. Cover and simmer for 20 minutes. Add potatoes, onion, celery, parsley, salt and pepper. Cook until potatoes are soft. Add milk and heat to boiling. Serve topped with croutons.
